For roughly 50 years, dietary guidelines in the United States, Canada, and most of the Western world have said the same thing about dairy: choose low-fat or fat-free. The logic was simple. Saturated fat raises cholesterol, cholesterol causes cardiovascular disease, therefore remove the fat. New research from the University of Toronto adds to a growing body of evidence that this logic was too simple.
The study: 74 adults, 12 weeks, three servings of full-fat dairy daily.
The trial, published in The Journal of Nutrition, randomly assigned 74 adults with overweight or obesity to one of three dietary groups: a low-dairy, calorie-restricted diet; an energy-neutral diet including three daily servings of full-fat dairy; or an unrestricted diet also including three daily servings of full-fat dairy. All participants received guidance based on Canada's food guide, and those in the dairy groups were supplied with full-fat dairy products for the duration of the study.
After 12 weeks, researchers found no meaningful differences in weight, body composition, or blood cholesterol between the low-dairy group and those eating three servings of full-fat dairy per day. The full-fat dairy groups showed improvements in blood pressure and consumed significantly more calcium, protein, and vitamin D. No adverse effects on blood lipids or insulin resistance were observed.
"Those that had three servings of dairy didn't have adverse levels of blood cholesterol or lipids or evidence of insulin resistance," said lead researcher Harvey Anderson, professor of nutritional sciences at U of T's Temerty Faculty of Medicine.
This is not a single outlier study.
Anderson notes that numerous human studies have found no association between full-fat dairy consumption and negative health outcomes. Some have reported protective effects, including research from Temerty Medicine showing that whole-fat milk lowered the risk of childhood obesity. The current study adds a randomized controlled design to that observational picture.
The dairy matrix hypothesis explains why saturated fat math doesn't apply here.
The researchers point to what is known as the dairy matrix hypothesis to explain why full-fat dairy consistently performs differently than the saturated fat content alone would predict. The idea is that the physical structure of dairy, casein and whey proteins bound together with fat and micronutrients, changes how the food is digested and how its nutrients are absorbed and used by the body.
"With dairy products, it's got two proteins, casein and whey, that are bound together with fat and with nutrients mixed in," Anderson said. This complex structure appears to result in a slower, more gradual delivery of nutrients compared to what isolated saturated fat would do on its own. The food matrix, not just the macronutrient breakdown, determines the metabolic outcome.
This framing challenges the nutrient-reductionist approach that drove decades of low-fat dietary guidance: the idea that a food's health impact can be predicted by analyzing its individual components in isolation. Whole milk, cheese, and yogurt behave differently in the body than the sum of their fats, proteins, and carbohydrates would suggest.
Anderson flags this as especially important for older adults.
As people age, energy needs decrease, but protein and micronutrient needs do not. Full-fat dairy is energy-dense, familiar, and delivers substantial protein, calcium, and vitamin D in a single serving. Anderson notes that it could offer a practical path for older adults to meet nutritional requirements without increasing chronic disease risk, a consideration that low-fat reformulations often undermine by stripping nutrients and replacing fat with sugar or stabilizers.
The Animal Base Perspective: The Food Was Right All Along.
The low-fat dairy recommendation was a product of the same reductionist logic Animal Base has been pushing back on across every food category: isolate one nutrient, find an association, build a policy around it, and strip a whole food down to avoid it. The result was decades of reduced-fat yogurt with added sugar, skim milk with thickeners, and low-fat cheese that satisfies no one and benefits no one.
Full-fat dairy in its whole form, raw cheese, whole milk, grass-fed butter, whole yogurt, is what the food was before it was engineered. The matrix is intact. The fat-soluble vitamins A, D, E, and K are present and absorbable. The saturated fat that was supposed to raise your cholesterol apparently did not, and the research has been saying so for years. The guidelines are finally catching up.
