Xanthan Gum Is in Almost Everything "Healthy." A New Study Links Daily Exposure to Colon Inflammation and a Leaky Gut.

A 10-week rat study from UNIFESP found that chronic xanthan gum intake caused colon inflammation, disrupted gut bacteria, and damaged the intestinal barrier. The concern isn't one serving, it's the cumulative dose hiding across your whole day.

Xanthan gum does not sound alarming. It is a common food additive, classified as generally recognized as safe by the FDA, and it appears in thousands of products marketed as clean, healthy, or allergy-friendly. Gluten-free pasta. Protein shakes. Packaged sauces. Low-calorie ice cream. Chewing gum. Supplements. If you are actively trying to eat better, there is a good chance you are consuming it daily without realizing it.

A new study says that daily pattern is exactly the problem.

Chronic xanthan gum intake caused colon inflammation, disrupted gut bacteria, and compromised the intestinal barrier in rats.

Researchers at the Federal University of São Paulo (UNIFESP) published a 10-week study in PLOS One examining what happens when rats are given xanthan gum regularly. The results showed colon inflammation, measurable changes in gut microbiota composition, and signs of a weakened intestinal barrier -- at every dose tested.

The inflammatory picture was consistent: elevated lymphocytes in the intestinal wall, higher overall inflammation scores, and increased levels of two key pro-inflammatory cytokines -- IL-1-beta and TNF-alpha. Gut bacteria remained broadly diverse, but the composition shifted, including an increase in Elusimicrobiota, a bacterial group associated with inflammatory states.

The mechanism, according to lead researcher Alessandra Rischiteli, involves the intestinal barrier directly. "Xanthan gum is reactive and opens the intestinal barrier, altering a protein [Claudin-2] that's responsible for regulating permeability between intestinal cells, which triggers an inflammatory cascade." Claudin-2 is a structural protein that controls how tightly the cells of the gut lining seal against each other. When it is disrupted, the barrier becomes more permeable -- a condition commonly referred to as leaky gut.

This is not the first time xanthan gum has been linked to intestinal harm.

In 2012, 22 premature infants in the United States developed necrotizing enterocolitis -- a serious intestinal inflammation -- after consuming formula thickened with xanthan gum. At least three died. At the time, the link was treated as a clinical hypothesis. This study, according to UNIFESP professor Claudia Oller who coordinated the research, changes that: "This study on rats proved causality -- that is, that xanthan gum does cause inflammation."

U.S. regulators subsequently banned xanthan gum from products intended for premature infants and recommend avoiding it in infants altogether. For adults, the guidance has not changed.

The concern is not a single exposure. It's accumulation.

Rischiteli is careful about scope: "This isn't about demonizing xanthan gum. It's possible that occasional use in small amounts as an additive doesn't harm health. The concern is with daily use as an ingredient and the cumulative effect of the thickener."

That distinction matters because xanthan gum is not a single-product ingredient. It is a systemic one. A person eating a gluten-free diet may encounter it in bread, pasta, crackers, and baked goods in the same day. Add a protein shake, a packaged salad dressing, a piece of chewing gum, and a low-calorie frozen dessert, and the cumulative dose climbs across products that each appear innocuous on their own. The ingredient list never tells you how many other labels that day also said the same thing.

The Animal Base Perspective: Single Ingredients Over Hidden Additives

Xanthan gum is a textbook example of the gap between "safe in isolation" and "safe at the dose most people actually consume." It is fermentation-derived, which sounds natural, and it has no calories, which sounds neutral. Neither fact tells you what it does to the intestinal lining after daily, repeated exposure.
